chocolate squares

I have a paleo recipe for you..

they are  chocolate coconut treats, squares, bars..whatever you want to call em :)

I love coconut. like. love.
and who doesn't love chocolate?
shh.. don't tell me.

this recipe sounded really yummy..
( found it on pinterest. I'm obsessed with pinterest. it's either working out. or pinteresting. yeah. I'm lame.)
and it was!
you have to get used to not having ultra sweet things..and kinda oily things..
but coconut oil is soooo good for you!

3/4 cup unsweetened coconut
1/2 cup ground almonds
1 tbsp coco powder


mix

add
4 tbsp coconut oil and 1 tbsp honey ( I think next time I'll add two tbsp honey)

put in pan and place in fridge..
then eat :)


just sharing my yumo salad I had for dinner last night..
it was a "whatever is in the fridge" kinda salad :)



are you getting all your water in???? I'm guzzling like no tomorrow! me n the potty are besties!

went to pilates last night. could barely lift my arms to make it home lol. that's how you know I rocked it!

I did get a lot more carbs than Planned, but I am still "weaning myself off" lol

I made a recipe I found in pinterest

yuuuuummmy!
Parmesan baked cauliflower

 warning: I dont measure.. lol. I guestimate

2ish cups cauliflower
2 tbsp Parmesan cheese
1 tsp parsley flakes
1 tsp garlic salt
1 tbsp oil
mix
place in pan

bake on 350 for about 20-30 minutes. until lightly golden

enjoy. I ate for dinner with some avocado mmmmmm

check out my goodies from my bountiful basket! everything I will eat! nothing scary this time :)

nummy breakfast

I started the Jamie Eason's Livefit plan I found on bodybuilding.com today:

I just had to take a pic of my yummy and healthy breakfast!




today..

breakfast (4 ww's p+)
half a flat bread
egg whites
slice of avacado
two pieces of "soy bacon"

it was actually pretty good and I'm not starving yet :)


snack (3 ww's p+)
cream of wheat
banana

lunch (5 ww's P+)
cottage cheese
salad
green beans

snack (6 ww's p+)
protein shake

dinner.. to be determined (5 ww's P+)
after dinner snack.. something yummy I'm sure (a few ww's p+)


the plan is eat every three or so hours.. small.. HEALTHY meals.. hit weight training hard and voila! 12 weeks, I'll be hawt!  aaaannnddd... It goes pretty well with Weight Watchers.. lots of power foods.. I am staying within my points plus limit.. woohoo!

it seems pretty simple and doable for me...
I will try to post plans and updates more than before. I really want this to work!

Pasta Fagoli

I am so sorry I've been missing.
I got an intestinal flu last week and was down for a few days!

I did lose 1.4 #'s.. kinda disappointing considering I didn't eat for three days... but eh well.. a loss is a loss...

I did make a new recipe last week.. before I got sick..
it was sooooo good! and super filling

Pasta Fagoli
Thanks to "authentic italian recipes, not just pasta" I downloaded on my Kindle fire..


 step one.. adding celery, onion, seasonings..

 added tomatoes (I didn't have fresh tomatoes.. so I used diced canned)
 adding noodles.. (again.. I didn't follow the directions.. I used shells instead of spinach noodles)
added beans

Veggie meatballs

While I drink my yummy fruit smoothie I just made, I'll share my dinner last night :)

I found these
at Costco
Had to have them!

This isn't a recipe out of a book, it's outta my head..

First.. they almost actually LOOK like the picture! Crazyness!

 I cooked em up.. added a couple tbsp of leftover Marinara sauce I had in the fridge
 added em to a bagel thin with some lettuce
 yummmynness!!

I added some tomatoes, a tiny cucumber (can't remember what they're called) and a couple spritz's of Balsamic vinegar..

sooo good!

the only issue I had was that I may have overcooked the "balls"
they got a tad squishy..
no biggie though.. easier to fit in my bagel thin :)

a Serving is 4 "meatballs" for 3 Weight Watchers Points Plus..
not bad at all!
I had five so I give them 4 p+..
add 3 for the bagel thin..
total P+ 7
not too shabby, eh?

Vegetarian sloppy joes

these were so good!!

I luff me some sloppy joes and this recipe was a keeper!

I got this recipe from
I downloaded this to my kindle fire..

Here's the recipe:
 if you can't read it-
1 small onion, finely chopped
2 teaspoons butter
1 pkg (12 oz) frozen vegetarian meat crumbles
1/2 tsp pepper
2 tbsp all purpose flour
1 can (8 oz) tomato sauce
2/3 cup ketchup

my variations- since I didn't need to serve six.. just me :)
I used about 1/8 of an onion
1 tsp butter
a small amount of the veggie crumbles (morningstar)
no flour
1/3 can tomato sauce
a squeeze of ketchup
I don't follow directions very well..
but the recipe is for six sloppy joes. The Weight Watchers p+ is 7
I used less than half and got 4 sloppy joes on my little rolls.. two for dinner and two for lunch today!
yumo! I give this 3 Weight Watchers points plus since I used half and made more sammies with it!
 Oh I did add a lil garlic salt..

Sauteeing the onion
 adding the crumbles, pepper and garlic salt
 adding the tomato sauce and ketchup
 done!


This was fun and yummy!

A smoothie

I know I said I would try a new cookbook recipe.. but my Kindle Fire took a while to upload  my cookbooks.
I have em now!!

in the mean time..

I whipped up this lil gem..
soooooo goood!!!

1/3 oz chia seeds 1p+
1/4 cup strawberries 0p+
1 cup frozen mixed fruit 0p+
1/8 cup fresh blackberries 0p+
1/2 banana 0p+
water and ice

before blending

 after blending..
yumo!!


The recipe builder gave me 5p+'s for this.. not too bad for dinner. it was super filling too!!

I'll try a new recipe tonight..

I spent the weekend cleaning and scrubbing my house preparing for our BRAND NEW furniture!
I am sooooo excited for it to be delivered today!!


Oh yeah.. please someone remind me to share my posts to FB and Twitter if I forget?? I always forget to share them.. no wonder I'm still hidden.. or maybe I'm just boring?

I am going to try at least one new recipe from a cookbook every day this month..
I will post the recipe, the book and pics of how it turned out..

eek!

This will be alot of work, but I need to live life. yanno?

What better way than to cook yummy food?
and to share with my friends?

thanks hungry girl

I picked this lil recipe from hungry girl.. and made it for dinner..

baked some wonton wrappers



mixed boca crumbles, vegetarian refried beans, and taco seasoning..
 


cooked it 
































added lettuce to the mini shells
topped with the bean and crumbles..

some ff cheese
a bit of sour cream, salsa, olives and tomato.
mmmmmmm






It was sooooo yummy..
even the youngest loved it.. bite sized anything rules!
