seriously peeps..
Two hours of Zumba Friday night.
it was a blast!

they are so stinkin cute I tell ya!
they had the gym full, blacked out, crazy lights n loud ass music! Fifty or so people showed up. it was amazing!
I can't wait to do it again!!
Then Saturday.. we went back for more!.. one more hour of Zumba.
My whole body was sore Sunday. But a great sore.
I haven't had that much fun in a long time!
It almost.. ALMOST wiped out the fact that somehow I GAINED two pounds last week.
seriously. I almost cried.
I have been working my ass off. literally.
and gained?
wtf man!
but it's a new week.
a fresh start.
right?
I made a deal with the teenager. We bought ourselves new Zumba outfits. They were pricey. but She is going to come with me every Saturday. To Zumba!
woot!
so my plan is Yoga twice a week, and Zumba twice a week. this will be on top of my running and other things.
I need to step it up a lot!
I need to get control of my eating again.
I am thinking of reducing my carbs. I get bloated and feel icky.. so I may try the "gluten free" thing for a bit.. just to see what happens.

Mindful eating
home sick one day last week.. me n the kidling were watching Dr Oz.. I heart this man, I tell ya!
he had Goldie Hawn on and she was amazing! a lil fishlippy.. but amazing all the same..
her new thing is "10 mindful minutes" feeling younger and such..
she had Dr Oz put a jelly bean in his mouth.. eyes closed and hold it..
feel it, taste it, savor it..
it was a great thing to watch..
someone experiencing their food.
I thought.. I need to do that
so.. I made my lil lunch of cottage cheese, fruit n chia seeds.. and it took me 45 minutes to eat the bowl.
it wasn't a big bowl either.
I TASTED every bite.
I SAVORED the berries.
I EXPERIENCED the chia
it rocked.
My new thing will be "to be mindful of my food" everything I put in my mouth. I need to ask.. Why am I eating this? Is it to fill a void? Is it to nourish my body? Is it to fuel a workout? Is it just to put something in my mouth because I'm bored, tired, filling the habit?? etc..
I need to pay attention to what I am putting in my body, so I can get the most out of my body! I want to be healthy and happy. Food is the best place to start!

Pasta Fagoli
I am so sorry I've been missing.
step one.. adding celery, onion, seasonings..
added tomatoes (I didn't have fresh tomatoes.. so I used diced canned)
adding noodles.. (again.. I didn't follow the directions.. I used shells instead of spinach noodles)
I got an intestinal flu last week and was down for a few days!
I did lose 1.4 #'s.. kinda disappointing considering I didn't eat for three days... but eh well.. a loss is a loss...
I did make a new recipe last week.. before I got sick..
it was sooooo good! and super filling

Veggie meatballs
While I drink my yummy fruit smoothie I just made, I'll share my dinner last night :)
I found these
at Costco
Had to have them!
This isn't a recipe out of a book, it's outta my head..
First.. they almost actually LOOK like the picture! Crazyness!
I cooked em up.. added a couple tbsp of leftover Marinara sauce I had in the fridge
added em to a bagel thin with some lettuce
yummmynness!!
I added some tomatoes, a tiny cucumber (can't remember what they're called) and a couple spritz's of Balsamic vinegar..
sooo good!
the only issue I had was that I may have overcooked the "balls"
they got a tad squishy..
no biggie though.. easier to fit in my bagel thin :)
a Serving is 4 "meatballs" for 3 Weight Watchers Points Plus..
not bad at all!
I had five so I give them 4 p+..
add 3 for the bagel thin..
total P+ 7

Vegetarian sloppy joes
these were so good!!
I luff me some sloppy joes and this recipe was a keeper!
I got this recipe from
I downloaded this to my kindle fire..
Here's the recipe:
if you can't read it-
1 small onion, finely chopped
2 teaspoons butter
1 pkg (12 oz) frozen vegetarian meat crumbles
1/2 tsp pepper
2 tbsp all purpose flour
1 can (8 oz) tomato sauce
2/3 cup ketchup
my variations- since I didn't need to serve six.. just me :)
I used about 1/8 of an onion
1 tsp butter
a small amount of the veggie crumbles (morningstar)
no flour
1/3 can tomato sauce
a squeeze of ketchup
I don't follow directions very well..
but the recipe is for six sloppy joes. The Weight Watchers p+ is 7
I used less than half and got 4 sloppy joes on my little rolls.. two for dinner and two for lunch today!
yumo! I give this 3 Weight Watchers points plus since I used half and made more sammies with it!
Oh I did add a lil garlic salt..
Sauteeing the onion
adding the crumbles, pepper and garlic salt
adding the tomato sauce and ketchup

A smoothie
I know I said I would try a new cookbook recipe.. but my Kindle Fire took a while to upload my cookbooks.

1/4 cup strawberries 0p+
